Destemming of the grapes. Cold pre-fermentation maceration at a temperature of 15 ºC for 4 days. Fermentation in stainless steel tanks at a controlled temperature (25 ºC) with daily punching down. Natural malolactic fermentation for 42 days in new 225-litre barrels. Ageing in 225-litre barrels. of new French oak for 15 months, with Respect toasting (specially designed by the cooper for this wine). Natural fining in the barrel and racking of the barrels every 4 months. Bottled unfiltered.
In view, cherry red colour with very high layer and little evolved. Very elegant, intense and expressive nose, with red and black fruit compote, but without losing the original freshness of the variety. Wood perfectly assembled with notes of sweet spices (blond tobacco and cocoa), all wrapped in a continuous milky sensation that harmonises the whole. In the mouth, fleshy, ample and deep, in which the fruity and milky notes reappear, with a very well-balanced acidity. The finish is marked by notes of creamy and sweet wood, on a mineral background that adds great elegance.
