The Iberian Acorn-fed Acorn-fed Ibérico Paletas Lazo come from 100% Iberian breed pigs, reared in the wild and fed on acorns and natural pastures in the pastures of the Sierra de Aracena y Picos de Aroche, Huelva, specifically in the town of Jabugo.
They belong to the Jabugo PDO, which gives them an added bonus by awarding them the “SUMMUM” Quality Designation.”This label is reserved for certain Iberian products that meet a series of extra quality requirements. All these characteristics confer and guarantee a high quality product that is expressed in the unctuousness of its meat, with an extraordinary marbling of infiltrated fat, typical of the Iberian pig breeds, and a peculiar flavour, full of nuances thanks to the natural feeding during the “montanera” season.
A special feature to be taken into account is its curing and maturing process in unique wooden drying sheds which regulate the humidity and temperature in a natural way, without nitrites or artificial additives. Its only ingredients are: Iberian shoulder and Salt.

Preservation of the Iberian Jabugo Shoulder SUMMUM
When you receive the ham you should remove the protective wrapping and place it in a cool, dry place out of direct sunlight. Once started, the meat should be protected with a layer of the initial fat that has been removed in order to preserve its unctuousness. Always use suitable, well-sharpened utensils to obtain the best characteristics of the ham. Start with the stifle, the narrow part of the piece that we observe with the hoof downwards, the opposite of the mace, the widest and meatiest part if we put the hoof upwards, which is the part that will be best preserved during the tasting period.
