Cinco Jotas (5J), is internationally recognised as the jewel of Spanish gastronomy. Its ham from 100% Iberian acorn-fed pigs has been reared free-range in the large pastures of the southwest of the Iberian Peninsula and fed on a natural diet based on acorns. Cinco Jotas, faithful to its origins, has always preserved the purity of the breed without any crossbreeding with other species, and also conserving the natural ecosystem in which it develops. The Dehesa del Suroeste Peninsular ensures the best feed for the Cinco Jotas Pure Iberian Pig.
During the period of Montanera the animals travel up to 14 km. per day to find the acornsacorns, their main food and responsible for their organoleptic and nutritional qualities (properties that help reduce bad cholesterol and improve cardiovascular health), which provide a texture that translates into an unequalled flavour.
For more than 130 years, Cinco Jotas has maintained the artisan and natural production of all its products, preserving the experiences and traditions passed down from generation to generation.
The Cinco Jotas natural cellars are located in Jabugo, in the Natural Park of Aracena and Picos de Aroche, which is part of the UNESCO Biosphere Reserve Dehesas de Sierra Morena. It is in this privileged place where a slow and natural curing process is achieved, where nature is the main protagonist.
TIPS
Storage: Once at home, the ham should be kept in a cool, ventilated place until it is ready for consumption. Once the ham has been received, it should be removed from the casing and the brown paper that protects it.
When cutting ham, we must have the necessary equipment before starting. A ham holder, a wide-bladed knife to clean the inside and outside of the piece, a long, flexible ham knife and a sharpener are the basic elements for getting the most out of each piece. It is very important to leave the cutting station clean and to adequately protect the cutting area to prevent the piece from rusting. We recommend covering the exposed area with thin slices of fat from the ham itself.
