The secret of our sheep’s cheese? A careful elaboration and maturing process where technology manages to combine the characteristics of an artisan cheese – flavour, aroma, texture, nutrition – with the rigour of the procedures that guarantee its quality and health, with which we manage to produce a gourmet cheese.
All our cheeses are made without egg-derived lysozyme. Lactose-free cheese.
Tasting: its six months of maturing give it an ivory-yellow colour. The flavour of this artisan Manchego cheese is aromatic, intense, very elegant and with a long finish.
