We prepare a good homemade sauce with tomatoes from the garden and when we turn off the heat, we place the Bonito loins and let it rest, let it cook with the residual heat of the “perola”. The stew our grandmothers used to make.

Burela, Avilés, Santoña, Colindres, Ondarroa, Hondarribia… All these ports receive top quality specimens. Cacea and live bait are the hooking techniques used by the sailors of the North to fish for this fish, both belong to sustainable fishing.
