This artisan cheese, Denomination of Origin Manchego, is made from Manchego sheep’s milk (raw). Its rind is natural, formed by the cheese’s own paste. The personalised treatment (as each cheese passes at least ten times through the artisan’s hands) and its minimum curing period of nine months greatly limit production and make it a gourmet cheese.
In November 2012, Dehesa de Los Llanos’ Gran Reserva cheese won the World Cheese Awards, the most important international competition in the sector, with the award for Best Cheese in the World. More than 2,700 cheeses from all over the world competed in this ranking, which was assessed by 255 judges.
