Each varietal is harvested and elaborated separately. Vatting at low temperature for pre-fermentative maceration, tank bleeding before starting alcoholic fermentation at 26ºC and once finished, post-fermentative maceration, thus completing 18 days of contact with the skins. Mazuelo and Garnacha fermented separately in small tanks and maceration for 20 days with the skins. The three varieties undergo malolactic fermentation in underground cement vats. They are then aged for 24 months in handmade French and American oak barrels (65% – 30%) with special medium toasting to achieve a greater contribution of sweetness in a “cold” vintage. Once assembled and bottled, it remains in bottle for at least 24 months to achieve greater complexity.

TASTING NOTES
Colour: Vibrant cherry red with a striking limpidity.
Aroma and taste: the nose is intense, harmonious, frank and noble. Notes of cinnamon, essences of mahogany and candied red fruits intermingle with a background of scrubland. Elegant and lively on the palate. Balanced acidity, with an enveloping, ripe tannin that makes it very pleasant. Reminiscences of red fruits in the aftertaste enhanced with notes of toffee caramel. Long and very lively.
CONSUMPTION RECOMMENDATION
Perfect with meat dishes, sausages, cured cheeses and stews.
Serving temperature: 16 – 18ºC.
