Our Cochinillo Segoviano Extra refers to white suckling pigs whose characteristics are white, creamy or waxy external colour, clean and homogeneous, without blood stains or other strange colouring. Flesh colour pearly white or slightly pinkish. This suckling pig is of 100% national origin, specifically from the province of Segovia.
The most common way of consuming our Extra Segovian suckling pig is roasted in the oven, using only water and salt as ingredients. Another of the most common recipes, since a few years ago, is to cook the suckling pig, cut it into small squares and fry it in plenty of oil.
The consumption of suckling pig is associated with celebrations and large, important meals, although this meat, which belongs to the white meat group, should be included in our diet 2-3 times a week.
