It has an approximate inner diameter of 6.8 cm and its lower spikes are adjustable in height by means of a manual thread, so that the ham holder J2 LUXE allows pieces of up to 6.8 cm in diameter approximately.
The rotating system holds the piece so tightly that it does not need the steel spikes that other ham holders have in their base. This makes it much easier to clean the ham holder and does not damage the ham or shoulder in its support area.
The bushing is fixed to a stainless steel support that is strongly anchored by means of screws to the ham holder base, which is also made of top quality stainless steel. It is very thick and heavy, which, together with its non-slip rubber feet, gives it great stability and safety when cutting. One of the legs of the ham holder is height adjustable, which makes it easier for the tool to sit on uneven surfaces.
The J2 LUXE Ham Holder comes standard with the Jamotec stirrup that allows the ham or shoulder to be raised to different heights, enabling the different areas of the piece to be worked better. The 24 cm wide stainless steel stirrup with teeth at the end also allows the ham to be cut crosswise (starting at the tip) and increases stability when the ham is already very thin and light.
