ELABORATION AND AGEING
This wine comes from plots grown in goblet-trained vines in poor soils with a sandy texture in the area of
Rioja Alta, its average age exceeds 35 years and the yield does not exceed 5500 kg/ha. The grapes are carefully harvested and transported to the winery in small containers. Fermentation
Alcoholic fermentation in stainless steel tanks at a controlled temperature of 28ºC, prior bleeding and a long maceration of three weeks in contact with the skins. Ageing in French and American oak barrels (90%-10%) for 28 months and subsequent bottle ageing for at least four years until leaving the cellar.

TASTING NOTES
Colour: ruby red with marked meniscus. Excellent brightness and limpidity.
Aroma and taste: after its first contact with oxygen, it is shy and frank. Notes of sweet wood, cinnamon, clove and candied fruits appear. Endless nuances that vary over time. Subtle and pleasant on the palate, with great finesse on entry and passage. Extremely polished tannin and serene acidity that maintains a long aftertaste.
CONSUMPTION RECOMMENDATION
White meats, baked fish. Cured meats and dark chocolate desserts.
Serving temperature: 18ºC – 20ºC.
