Cinco Jotas 100% Iberian Acorn-fed Paleta Cinco Jotas 5 – 6 kg. Whole piece of 5 to 6 kg.
The Cinco Jotas shoulder has been produced from a careful selection of pure-bred Iberian pigs, which are reared in the wild in the south of the Iberian Peninsula.
During part of the fattening process, acorns are the only source of nutrition for these pigs. This fruit provides the animal with a high percentage of oleic acid, which gives the shoulder its healthy characteristics, as it is rich in omega-3, omega-6 and omega-9.
TIPS
Preservation: It is important to remove the pallet from the case and paper covering it during transport. Cutting should be done with care and the best tools to get the most out of it. A ham holder, a wide-bladed knife to clean the inside and outside of the piece, a long, flexible ham knife and a sharpener are essential materials to make the best possible cut. It is important to take care of the cutting station, leave it clean and protect it well to prevent the piece from rusting. To do this, cover the exposed area with thin slices of fat from the shoulder itself.
