										<content:encoded><![CDATA[<p>The <strong>Jamones</strong> Ibéricos de Bellota Lazo come from 100% <strong>Iberian</strong> breed pigs, reared in the wild and fed on acorns and natural pastures in the pastures of the Sierra de Aracena y Picos de Aroche, Huelva; specifically in the town of JABUGO.</p>
<p>They belong to the Jabugo PDO, which gives them an added bonus by awarding them the <strong>&#8220;SUMMUM&#8221; Quality Designation.</strong>This label is reserved for certain Iberian products that meet a series of extra quality requirements. All these characteristics confer and guarantee a high quality product that is expressed in the unctuousness of its meat, with an extraordinary marbling of infiltrated fat, typical of the Iberian pig breeds, and a peculiar flavour, full of nuances thanks to the natural feeding during the &#8220;montanera&#8221; season.</p>

<p><strong>Preservation of the Iberian Jabugo Ham SUMMUM</strong></p>
<p>When you <strong>buy</strong> the ham, remove the protective wrapping and store it in a cool, dry place out of direct sunlight. Once started, the meat should be protected with a layer of the <strong>initial</strong> fat that has been removed in order to preserve its unctuousness. Always use suitable, well-sharpened utensils to obtain the best characteristics of the ham. Start with the stifle, the narrow part of the piece that we observe with the hoof downwards, the opposite of the mace, the widest and meatiest part if we put the hoof upwards, which is the part that will be best preserved during the tasting period.</p>

<h3>This 100% acorn-fed Iberian pork loin from Sierra de Jabugo S.L. is a product made in a traditional way. Cured for three months in a natural dryer in the Sierra de Aracena y Picos de Aroche (Huelva).</h3>
<p><span class="texto-base">Loin of pork from 100% Iberian pigs fed naturally on acorns during the montanera season. This is why this loin of pork is called &#8220;de bellota&#8221; (acorn-fed).</span></p>
<p><span class="texto-base">The pieces are cured for between 80 and 90 days in our natural drying sheds in the Sierra de Huelva.</span></p>
