										<content:encoded><![CDATA[<p>The Red-legged Partridge (Alectoris Rufa), which can be identified by its brown, slightly reddish back, grey underparts on the chest and reddish underparts on the abdomen, is native to south-western Europe and especially to the lands of Castilla-La Mancha, where it has been the emblematic game bird since ancient times.</p>
<p>At Dehesa de Los Llanos the partridge is born, bred and reared in the field, so its morphology is that of an authentic, strong and tasty native wild partridge. The pickled partridge from Dehesa de Los Llanos comes exclusively from the farm and has been slaughtered during hunting. It is then plucked and located &#8211; by means of an X-ray machine &#8211; and the pellets are extracted.</p>

										<content:encoded><![CDATA[<p>This artisan cheese, Denomination of Origin Manchego, is made from Manchego sheep&#8217;s milk (raw). Its rind is natural, formed by the cheese&#8217;s own paste. The personalised treatment (as each cheese passes at least ten times through the artisan&#8217;s hands) and its minimum curing period of nine months greatly limit production and make it a gourmet cheese.</p>
<p>In November 2012, Dehesa de Los Llanos&#8217; Gran Reserva cheese won the World Cheese Awards, the most important international competition in the sector, with the award for Best Cheese in the World. More than 2,700 cheeses from all over the world competed in this ranking, which was assessed by 255 judges.</p>
<p>The secret of the World&#8217;s Best Cheese? A careful elaboration and a slow maturing process, where technology manages to unite the characteristics of an artisan cheese &#8211; flavour, aroma, texture, nutrition &#8211; with the rigour of the procedures that guarantee its quality and health.</p>
